In advance of the Thanksgiving feasting next week, you’ll want to take the path of least resistance by making these easy fall slow cooker soups this weekend. Though I love the ease of summer fashion, I don’t find the food that easy to prep. Not that I don’t love summer fruits, fresh salads, and barbecues but cooking during these cooler weather months somehow seems easier. I think it’s my love affair with my slow cooker. You can’t exactly throw your fresh salad ingredients into the salad mixer and expect it to come out sliced, diced and ready to eat. That salad takes a bit of prep and it has to be eaten right away. I can’t tell you how much fresh produce goes to waste in my refrigerator. The ease of one pot cooking and freezing saves me money so it feeds my soul and my bank account.
As a singleton, I don’t cook very night but I do prefer to cook my own food usually on Saturday or Sunday afternoon. I just pop all my ingredients into the crock pot and go on about my business. And viola! Within a few hours I’ve got a delicious hearty and filling meal that I can eat during the week for lunch or dinner. Beef & Barley Soup – This hearty stick to your ribs soup will leave you feeling cozy and satisfied. Especially, if you serve it with a warm crusty bread.
Chicken Noodle – Who doesn’t love Chicken Noodle soup? It’s good even when you’re not sick. I like mine with saltine crackers and a dash of hot sauce.
Vegetarian Chili with Sweet Potatoes – When you want to give eating meat a break try this vegetarian chili which provides loads of vitamin packed veggies and meatless protein from the beans.
